How Long Does Deli Meat Last?

Opened deli meat is highly perishable. Most sliced deli products last 3–5 days refrigerated after opening — often less than the printed date once exposed to air and handling.

Printed date vs opened package

Treat the printed date as an unopened-package cue. Once deli meat is sliced or the package is opened, air exposure and handling start the shorter refrigerated window.

For party trays and lunchboxes, combine this page with the 2-hour rule because time at room temperature can make the fridge date irrelevant.

Storage tips

  • Keep at 40°F or below; store in original packaging or airtight container.
  • Use within 3–5 days of opening even if the sell-by date is later.
  • Never leave deli trays out at parties more than 2 hours.

Spoilage signs

  • Slimy surface or sour smell.
  • Gray edges on turkey or roast beef.
  • Gas or bulging in vacuum packs — discard unopened.

Lunch-packing

Use an insulated bag with ice packs if lunch will sit unrefrigerated for more than 2 hours.
