Super Bowl parties, picnics, and potlucks are high-risk because food sits in the danger zone for hours. The 2-hour rule applies to everything perishable — including wings, dip, deli meat, and cut fruit.
Set a timer
Mark when food left the fridge. After 2 hours at room temperature (1 hour if above 90°F), discard perishable items or move them to the fridge.
High-risk party foods
- Chicken wings and any cooked poultry.
- Cream-based dips, queso, and mayo-based salads.
- Sliced deli meats and charcuterie left unrefrigerated.
- Seafood shrimp rings and ceviche.
Keep food safe longer
- Serve cold food on ice; hot food in slow cookers above 140°F.
- Replace empty platters instead of topping up old ones.
- Use small bowls of dip — refresh from the fridge.
