Leftovers Left Out Overnight: Safe or Not?

Food left on the counter overnight has almost certainly spent more than 2 hours in the danger zone. USDA guidance: discard it. This includes pizza, pasta, rice, soup, and cooked meat.

Why overnight is unsafe
Room temperature falls inside 40°F–140°F for hours. Bacillus cereus on rice and Staph toxins on pizza and meat can survive reheating.
Rice and pasta
Cooked rice left out overnight is a common source of food poisoning. Cool rice quickly in shallow containers and refrigerate within 2 hours — never leave it on the stove overnight.
Safe leftover habits
- Refrigerate within 2 hours of the meal.
- Store in shallow containers; reheat to 165°F (74°C).
