Butter is one of the best dairy foods to freeze. Keep it in its wrapper and slip it inside a freezer bag or airtight box to block out other odours, which fat readily absorbs. Salted butter keeps up to 9 months and unsalted a little less. Thaw it overnight in the fridge; the texture and flavour come back essentially unchanged.
