Summer cookouts keep food in the danger zone for hours. The 2-hour rule applies to burgers, hot dogs, potato salad, and cut fruit — 1 hour when outdoor temps exceed 90°F (32°C).
Grilling temperatures
- Ground beef burgers: 160°F (71°C)
- Poultry (chicken, turkey): 165°F (74°C)
- Hot dogs: reheat until steaming if not freshly grilled
Keep cold food cold
Serve salads and dips on ice. Replace platters instead of topping up food that sat out.
Leftovers
Refrigerate within 2 hours. Most cooked cookout foods last 3–4 days refrigerated.
